Carb-free Mexican

I love Mexican food. Minus the deep-fried burrito bread, layers of cheese and big dollops of cream, it’s actually pretty healthy – it is, after all, just meat, rice and beans. I satisfy my Mexican cravings while still maintaining a clean diet with this super easy meal, which has a real kick to it and is sure to fire up your metabolism!

Ingredients (serves 2):
1 chicken breast, cut into bite-sized pieces
1 garlic clove, crushed
1/2 onion, chopped
1 red capsicum, chopped
1/2 can diced tomatoes
Green chilli, diced
1 Tb Taco seasoning or chilli powder
1 tspn ground coriander

Heat a tablespoon of oil over medium-high heat in a large frying pan. Add the chicken and saute until cooked through. Remove the chicken from the pan and set aside.

Add all the other ingredients, cooking for 5 minutes or until the onion has softened.

Return the chicken to the pan and mix thoroughly. Serve over leafy greens (or brown rice if you need the carbs!).
