Chicken peanut curry

This is super tasty and a good way to mix it up if you’re tired of eating the same old chicken and vegetables. Definitely a good one for those who love their peanut butter!

Ingredients (serves 2):
1/2 onion, roughly chopped
250g chicken, cut into bite-sized pieces
1/2 Tb curry powder
1/2 Tb Moroccan seasoning
2/3 cup chicken stock
1 Tb tomato paste
1 Tb peanut butter
1 carrot, cut into batons
75g green beans. trimmed and halved

Heat a lug of oil in a large frying pan over medium-high heat. Add the onion and cook for 2-3 minutes, until softened.

Add chicken and cook until browned, but not cooked through.

Add the curry powder and Moroccan seasoning and mix well.

Add tomato paste, peanut butter and chicken stock. Mix well. Bring to the boil, and then reduce heat and simmer uncovered for 5 minutes.

Add the carrots and beans and cook for 10 minutes or until the chicken is completely cooked through and the sauce has thickened.

Season with salt and pepper and serve.
